Crêpes Recipe

  1. Melt the butter in the microwave and lightly heat the milk which should be barely lukewarm (this avoids lumps)
  2. Mix the sifted flour, sugar, salt in a large bowl. You can replace 50 g of flour with cornstarch for lightness
  3. Add the eggs, the melted butter, then gradually the milk, beating well with a whisk to avoid lumps forming.
  4. Add the vanilla and leave to rest for 30 minutes before starting to cook.
  5. Heat a knob of butter in the pan and add a ladle of dough
  6. Cook your crêpes on each side until they are nicely browned
  7. As you go, set aside on a plate, covering with a sheet of aluminum foil to keep them warm and soft.

You should get between 15 and 20 pancakes with a 20 cm diameter pan.
